Ingredients

Coconut cream: 

  • 1 can coconut cream
  • 1 Tbsp honey
  • 1 tsp vanilla essence

Pastry: 

  • 3/4 cup warm water (around 45 C)
  • 1 tablespoon sugar
  • 1 packet yeast (10g)
  • 2 cups (285g) cassava flour 
  • 1 teaspoon salt
  • 1 large egg
  • 1 tablespoons grapeseed or any  oil with neutral taste
  • 1 teaspoon cider vinegar
  • 2 tsp vanilla essence
  • Topping: colourful fruits and flowers- mango, pawpaw, passion fruit, pineapplemint

Fruits are pieces of art by nature! They have sublime colors and their shapes are an invitation to create. What I like about this pizza, it is simple and it showcases the beauty of the fruits. You can use any fruits in season to get the maximum colors and taste. It is a great recipe to enjoy with your relatives as it will please any age!
Directions
  1. Place the coconut cream in the fridge for ½ day. Remove the cream (from the coconut water). Mix with 1 Tbsp honey and 1 tsp vanilla essence.
  2. Set pizza stone on lowest rack of oven, and preheat to 230C.
  3. Mix water, sugar, and yeast and let sit for 5 minutes, or until it looks foamy.
  4. With your hands, mix flour blend and salt. Add in egg, olive oil, vinegar, and yeast mixture.
  5. Using an oiled spatula, transfer the gluten-free pizza dough onto a piece of parchment paper or silicone mat. Using oiled hands, spread dough into a nice thin base.
  6. Bake for 8-10 minutes.
  7. Prepare the fruits: slice/dice them that they look great…be creative! Slice mangoes and pawpaw, small dices of pineapple. Finish with a few leaves of mint and 1 flower to decorate
